Rub some minced garlic over the inside and outside of the steak and then mix the rest into the stuffing. Sprinkle the outside of the steak with salt and pepper.
Pack most of the stuffing into the cavity that you have made, the meat will swell up some, just close the end of the steak with toothpicks as you wish. In a large baking dish with a cover or aluminum foil can be used.
Warm the olive oil over a medium high heat, brown the steaks on all sides, now crumble the remaining stuffing into the pan. Pour the beef stock and tomato sauce over the steak and add the bay leaves.
Simmer at low heat, covered for approximately 3 hours until tender. Turn the steak over once about ½ way through cooking. Remove the Boliche from the pan and let it cool for about 20 minutes so it can become firm.
